It depends on how many people you are catering for. You have to have enough cooks to cook all the food, timing is the important step, you want all you food done the same time. Then you have to have enough servers to keep drinks filled and remove empty plates. So it really just depends.

man its all in your own willingness to kill yourself to make a buck-however(i did) i catered the christmas party for the idx tower -10,000 ppl. with myself a'sous-chef' and 2 ppl. doing prep its all about mise-en place' baby-get your ducks in a row-know the customer-old-young?eat alot ?would rather get drunk?-take all these thigs into acct;& from there its an educated guess the KEY is to cut cost without compromising QUALITY AND WITH THAT YOU'LL BE A SUPERSTAR!!
