Everyone has a "maintenance" caloric level --- if you eat below that level, you will lose weight.
It doesn't sound like you want to lose weight; it sounds like you want to lose fat.
If you stop eating processed starches (white bread, potatoes, rice, fries, etc) and saturated fats..........and switch to unsaturated fats, protein, and complex carbs (vegetables, chicken/fish/lean beef, fruits, nuts, etc); you should start seeing significant recomposition.

It's probably muscle you're gaining, not fat. Pay attention to how your clothes fit, not what the scales say. And keep on doing what you're doing! Don't give up until you've reached your goal and even then, do everything in moderation to maintain the weight you achieve!
