We will have to have about 1000 people in the photo. We are not sure how high we should be or the type of camera and lens to use. Also does anyone know how long it might take to arrange the people?

You could use a wide angle lens and take the picture from on top a ladder, but wide angle lenses tend to distort. That means the people in the middle will show okay, but the ones on the edges will look tiny and far away.

I'd go for something normal (35-55mm) from higher up, like a rooftop. A standard single lens reflex camera would work fine, either film or digital.

As for how long it takes to arrange them, try a practice run first to find out. I think it would depend on the people involved, and practicing would make it go faster and more smoothly.

The type of camera to use would be simple, Hasselblad X-pan with a 30mm lens (although it is 30mm, because it is a panoramic camera the overall coverage is similar to a 15mm lens, except that you dont have to worry so much about that spherized look). Although the camera shoots standard 35mm film it has a resolution comparable with medium format cameras . If you check with professional camera stores you should be able to rent one, but if you cant find one in your area try these guys http://www.kspphoto.com/
