I love fresh beets
the tops I steam and serve with bacon and sauteed onion
the beets you have to boil for about 40 minutes
then with oven mitts that are going to get all red peel them
the skin comes off real easy
then cut them up and put butter on them

Good varieties of beets fresh from the garden can be very sweet when used raw. I had a great batch we ate raw a couple of years ago.

Scrub a couple of beets, use a potato peeler to peel, then grate the beets. Add 2 grated carrots, a whole green onion cut crossways into 1/4 inch slices, about 1 tbsp of fresh finely chopped mint, 1/2 tsp of dry dill weed, some white balsamic vinegar and a touch of olive oil. Toss together and serve cold.

Here's another suggestion. Peel with a potato peeler and cut in half. Put on a cookie sheet that has been oiled with olive oil. Then sprinkle with some herbs and more olive oil and put in a 375 degree oven for about half an hour. Delicious that way. You can also put other root vegetables with it such as carrots, parsnips, potatoes (red or white), and let them get brown and caramelize a bit. A good accompaniment to roast beef, lamb, pork or chicken.

cut the leaves off just to above the edge, don't cut into the beets wash them and put in a large pot of water, add a good amount of salt and the same quantity of sugar' bring to a boil and cook till tender when you pierce it with a fork'
if you are going to eat them hot cut off the two ends and peal very carefully '
they are really good cold too and a lot safer to peal
