It's not the dressing Joe, it's the concept of eating something that looks healthy even if they don't know what that means. What ever you decide to use as dressing, it doesn't go on the "salad" it's now a "Dipping" sauce and hey you have to eat it with your fingers, I have never seen a kid that's eating with his/her fingers with a frown on their face, and you know kids and finger foods. "Allow" them to eat this way, only at home though. If you build your meal so it's eaten with fingers only you may not get them up from the table, ie. Chicken drumettes, corn on the cob etc. etc. Well I'll grab my soap box and scoot on out, tc

i say go to a buffet let them try several without pressure... make it an exploration game.
age is a factor of course but heres some things I learned along the way.
It may not be the dressing it maybe the salad or the enviroment..
Remember kids need 4 or more exposures to something to really decided if they lilke it or not. My daughter is very dramatic I've learned not to ask if she wants to try something.. I just keeping making and eating it myself without any extras comments..... eventually she starts asking questiosn which I answer..... then she asks for a taste and almost always hates it the first time. the next time its ok but she dont want any. eventually she wants her own. this worked with mangoes, greenbeans, sweet potatoes. But her tastes are a constant evolution.
Include the child in the selection process. Go in to the grocercy or open market set a budget.. make it fun without punishiment. try 2 or 3 weekly or monthly. This is where a buffett really helps one charge, no waste. Also some kids are more willing to eat what they have helped to grow. Investigate how to store, wash and cut teh vegtables. Use cookie cutters if possible. Some kids perfer to eat larger pieces to dip. Others perfer pieces so smal its almost a homogenous taste.
Try different lettuces some are more bitter some sweet.
ever considered the new sprays? or shaking the salad in a plastic bag?

Try these simple recipes:
*Marshmallow Dressing recipe*
1/4 to 1/2 cup fruit juice (orange, pineapple and
apple) or Grand Marnier liqueur
8 ounces cream cheese, softened
4 ounces Marshmallow Fluff
Blend cream cheese and Marshmallow Fluff thoroughly. Gradually add liquid to desired consistency.
Spoon over fruit salad or serve as a dip for prepared fruit.
*Sensational Sweet Fruit Dressing recipe*
1 1/2 cups granulated sugar
1 1/2 teaspoons salt
1 1/2 teaspoons paprika
1 1/2 teaspoons onion, minced
1/2 cup catsup
1/2 cup cider vinegar
1 1/2 cups vegetable oil
1 1/2 teaspoons celery seeds
Put all ingredients in blender and blend until smooth. Store in a jar in the refrigerator. Serve over drained canned fruits or fresh fruits.
*Peanut Butter Fruit Salad Dressing recipe*
1/2 cup dairy sour cream
1/4 cup creamy or chunk style peanut butter
1/4 cup dark corn syrup
Mix together sour cream, peanut butter and corn syrup.
Serve over mixed fresh fruit salad.
Makes 1 cup.

Catalina (sweet and sour dressing). All the way. It's the red-orange stuff by Kraft. Or honey mustard. YUM!
