they would still be snickerdoodles, but they would taste different (not as good).

i am from india,i don't claim to know snickerdoodle ,but going by cookies & baking in general ,lack of vanilla extract would change the flavour not the taste.If the vanilla flavour is an integral part of this cookie then you will miss it ,but go ahead be adventurous ,u never know you may have a discovery on your hands ,if it is vanilla you don't like then there are other essenses ,also powdered nutmeg or cinnamon give a good flavour.

Sure. In fact I have seen several recipes that do not call for vanilla. Wikipedia has a few. The cinnamon becomes the predominant spice. You can also use nutmeg.

sure. vanilla has pretty much no effect on the chemistry of the cookie. it's just for flavor. and if you don't like it, don't add it.
