I had a friend when I was little, who's father owned an Italian restaurant. He dried it by putting it in a clean towel, holding the corners and giving it several hard shakes.

I used to use paper towels to pad them, bought a year ago I brought this salad swisher, you can buy it at any big store like target, or you know stores that sell kitchen equiptment. OK, a salad swisher is like a bowl with a slightly smaller bowl inside it. You put the lettuce in the smaller bowl. Then there is an attachable top with a thing you push down which makes the smaller bowl inside the big bowl spin and it dries off the lettuce, sorry I am doing a horrible job explaining!!!

Air dry the lettuce in a strainer as much as possible, then lay them spread out on paper towels for it to soak.

Lettuce is also good when you eat it not that dry.But if you really want it dried,you can use two (2) paper towels.But don't dry it too much because it may lost its crunch!yumyum!

Put it in between two paper towels or a dishcloth and pat dry it. Be gentle though, you don't want it to lose it's crunch.

put it in a clean towel gather up the ends so its like a pouch and swing it around over your head, and it's fun too
