Here are some 3 ingredient meals for you. How simple is that?
Tomato Pesto Spaghetti

1 lb. spaghetti pasta
10 oz. container basil pesto OR 1 cup homemade pesto
4 ripe tomatoes, chopped
PREPARATION:
Cook spaghetti according to package directions until al dente. Drain, reserving 2 Tbsp. cooking liquid. Return to pot along with reserved cooking liquid. Stir in pesto over low heat until spaghetti is evenly coated.
Add tomatoes at last minute and serve. 4-6 servings

Beef Stacks

1 lb. beef fillet steak
1/2 lb. cheddar or swiss cheese, thinly sliced
4 marinated artichoke hearts, plus some liquid, OR 4 pickled onions, plus some liquid
salt and pepper to taste
Prepare and heat grill, if using. Sprinkle beef with salt and pepper and cook on grill or under broiler for about 14-16 minutes (medium), until desired doneness, turning once during cooking. Cover with foil and let rest for 15 minutes, then slice very thinly against the grain.
Slice onions or artichoke hearts very thinly.
Layer beef and cheese slices on each plate. Top with slices of artichoke heart or onion and drizzle with some of the pickling liquid. Season with salt and pepper, if desired. Serves 4

Bon apetite

How about some fish or chicken breast. With some herbs and spice you can have a meal in a few minutes. Example: Take a raw chicken breast and add some fresh ground pepper, thyme, garlic (fresh), and a dash of salt. Put olive oil in a pan and pan fry the chicken. There are several different ways and things to make that are easy. All depends on your tastes. Steaming your food w/fresh herbs and spice is also healthy. Check the web for recipes.
