For an all-purpose cooking/snacking cheese - Tillamook Extra Sharp Cheddar, Black Label. Expensive, but Gods, is it good!!

Favorite cheese to sneak into recipes where it would never be expected - Maytag Blue. Stinky, strong with a strangely creamy "mouth feel" even though it is crumbly. Hmmm.

Favorite mild cheese - Queso Fresco, any brand (I don't think there's a 'bad' one). I just love the fresh, clean taste of this cheese. They certainly aren't lying with the name!

Favorite Spreadable cheese - Mix Presidente Brie and Neufchatel and you've got yourself a nice, mild, subtly unique sandwich spread. I use it instead of mayo quite frequently.

Favorite 'dessert' cheese - Presidente Brie.

I think it's safe to say I just like cheese.

Mature Cheddar, though I do like Dutch Gouda and that Austrian smoked cheese "rump" something thats name escapes me but I know it when I see it. I'm not a big fan of French cheeses and Blue cheese makes me barf

I love all cheese...escpecially with my wine!!!! I really like the unique flavors of asiago and blue cheese. By my favorite everyday cheese is monterey jack. But I love to use pepper jack in my spicy cheese, sausage, & salsa dip.
