My great-grandpa keeps asking me to make him a pineapple cheesecake pie at Christmas, but he doesn't have a recipe or anything. Last year I made one, but it involved mixing the crushed pineapple and cream cheese together, and he says he prefers the pineapple be on top, and not mixed with the cheese.

I lost last years recipe and am hoping to come closer to what he likes this year. Anyone have a recipe or a link to one? Or any suggestions? Thanks SO much!

Try this recipe but instead of the cherry pie filling use the following
1 1 pound can crushed pineapple
1 Tbsp cornstarch or arrowroot
2 Tbsps butter
Drain the pineapple and mix the cornstarch with the juice. Bring to a boil and cook until thickened. Add the butter and pineapple, mix well. Cool completely before topping the pie. I hope this helps, Grandpa's are special!......Kate

I just found this recipe in the bottom of my recipe box, a oldie but goodie! I clipped it from a magazine years ago, when I was in my teens I suppose because I remember making it all the time.It's quick and easy and really delicious.
Ingredients




1 9 inch graham cracker crust (purchased or home made)
1 8 oz package cream_cheese, softened
1 14 ounce can sweetened_condensed_milk , such as Eagle Brand (NOT evaporated milk)
1/3 cup lemon juice
1 tsp vanilla_extract
1 regular size (about 1 pound) can ready to use cherry pie filling, chilled.



Directions
Step: 1In a large mixing bowl with an electric mixer on high speed,beat cream cheese until light and fluffy. Add sweetened condensed milk and beat until smooth. Add lemon juice and vanilla, beating to combine. Pour into crust and chill until set, about 3 hours. Top with the chilled pie filling.Refrigerate leftovers.

Jim's Pineapple Cheese Pie Ingredients 1 (9 inch) pie crust, baked 1 (20 ounce) can crushed pineapple with juice 1 (8 ounce) container frozen whipped topping, thawed 1 (6 ounce) package pineapple gelatin 1 (12 ounce) container whipped cream cheese Directions Drain juice from pineapple. Set the fruit aside. Dissolve the gelatin in the pineapple juice, and microwave for 1 minute. Mix whipped topping and cream cheese until smooth. Mix pineapple into creamed cheese mixture. Stir in gelatin, and mix thoroughly. Pour into pie shell, and refrigerate for 4 to 5 hours. Hope this helps... So sweet of you do this for your G papa

Pineapple Cheesecake
Categories: Cakes, Desserts
Yield: 12 servings
---------------------------CRUST--------------------------------
1 1/2 c Graham cracker crumbs
2 tbsp Sugar
3 tb Margarine or butter; melted

--------------------------FILLING-------------------------------
19 oz Cheese, cream; softened
1 c Sugar
1/4 ts Vanilla
3 Eggs

---------------------------GLAZE--------------------------------
2 cups of crush pineapple
1/2 c Sugar
2 tb Cornstarch
1 tsp gellatin
3 TB lemon

Pre-heat oven to 350øF.

CRUST: Stir together graham cracker crumbs and sugar. Mix in butter
thoroughly and press into a 9" springform pan. Bake 10 minutes. Cool.
Reduce oven temperature to 300øF.

FILLING: Beat cream cheese in a large mixing bowl. Gradually add
sugar, beating until fluffy. Add vanilla. Beat in eggs
one at a time. Pour into shell. Bake 1 hour or until center is firm.
Let cool in 25 mins.
Chill 3 hours.

GLAZE: Mix sugar ,pineapple,lemon . Cook in midium, stirring constantly and boil for 5 mins and add the (mix with 2 tbsp water ) corn starch gellatin then add it. Continue stir until the juice looks clear thats means the corstarch done.
Let it cool for 4 minutes and then pour it on the cheesecake evenly...Let it chill for 2 hours or more....
