You came to the right person , the way to do it is get two chicken breasts and boil them on a low flame for about 1/2 hour put a little garlic powder and onion powder with just a pinch of salt into the water with chicken. After 1/2 hour let chicken stand to cool down , now remove chicken from pot and the chicken will shred really easy using your fingers . Now for the best part , go to the market in the Mexican food isle and buy one bottle of ( MOLE' ) mix 2 table spoons of mole with 1/2 cup of water low flame , now add chicken and cook it for about 20 min stirring continually . Now remove chicken from Mole and leave the left-over mole in pan prepare the tortillas fill tortillas with chicken a little bit of cheese pour some of the mole over tortillas , then place all of the enchiladas into a cookie dish bake them at 325 degrees for 15 to 25 min. until you see them brown take them out of oven when done and again put cheese over them and serve while hot . Make sure to get some Spanish rice and re fried beans to go with this dish , you will love it , let me know how it went . Thanks!

How To Shred Chicken

I make the best chicken enchilladas. Cook the chicken the day before you plan to make the enchiladas if you do not have a lot of time. I crock pot 4-5 frozen chicken breast for at least 8 hours with 1/2 to a cup of salsa. (Normal cook time is 6-7 hours) The salsa will help keep the breast moist and gives it a kick.( You may also add a drop of soy sauce for extra flavor. No need to add water to frozen breasts. Once the crock pot is done the chicken will pretty much already be shredded, Not receommended if you want solid chicken. But this way is the best and easiest for my enchilladas. Trust me my husband LOVES them! Enjoy! Remember cooking is fun! Never be afraid to try somthing new!

Some cheese shredders have a side that you could slice a cooked chicken breast or if worst comes to worst you could pull the the meat of with your hands....after you wash them of course.

TOOLS: a fork and your fingers.

you have to cook the chicken 1st.

i recommend cooking the thawed chicken in a pan with butter. lightly salt and pepper the chicken on both sides.

now just rip it up into pieces.

I guess you can shred it with your hands or something.. because it'll go in the enchilada and as long as the amount is right you should be fine. I guess shredding also helps coat the chicken pieces with the flavour!

Use a fork and follow the grain of the breast, top to bottom, not accross.
