I'm a pretty picky eater; here's some sandwich ideas for the 'picky' menu..lol :)
Chicken + Bacon
-If you're looking for healthy, choose a grilled chicken like teriyaki; if not go with regular breaded chicken tenders.
-Bacon
-Provolone cheese
-Wheat bread
Ham + turkey
-honey-baked ham
-swiss or provolone cheese
-lean turkey
-wheat or white bread

first , no butter - i hate butter but its so hard to find any pre-made sanwiches that are not covered in butter.
My favourite sandwich is this:
cut up a boneless breast of chicken and dip the pieces in flour
season with salt and pepper
heat a frying pan with some olive oil and fry the pieces
warm a bread roll in the oven while youre cooking the chicken
when warm enough, split in half and spread with mayo(only hellmans will do here and dont skimp ;-) )
put on salad leaves or baby spinach
top with the warm chicken
squeeze on some lemon juice
you can also do this recipe with salmon instead of chicken..i always bake/steam the salmon instead of frying cos salmon has enough of its own oil.
as for type of bread, i use pitta bread or long rolls..never slices of bread cos it just doesnt taste the same.

I worked in a sandwich shop in Dallas for approx. 3 yrs. One of the things I liked best about it was the deli case. They 20+ sandwiches to choose from but, they also had the meats and cheeses on display so you could see what's available and that it is freshly sliced. It was of course assembly type line like Subway but you could choose to have a sandwich or a salad. Also, I think one of the must haves for a sammy shop is to have at least 2 excellent quality soups for the cold weather months. Hope this helps.
BTW--I love many various types of sammys, here are a few of the fave parts:
Breads-Pumpernickel, Wheat, Sourdough
Meats-Pretty much any lean meat, just no loave types-yuck
Lots veggies-Lettuce, Tom, Cukes, Sprouts, not big on the bell peppers or olives or onions unless they are VERY thinly sliced
Extras-the aforementioned sammy shop taste tested several dozen types of pickles to get the one they thought was unique and just right, it definately wouldn't hurt your business to have a unique pickle and/or other condiments.

One of the tastiest things to put in a sandwich is sliced red onion rings that have been marinated in sour cream for a few days. They keep for a long time. Also I love Rosemary Ham from the deli, smoked corned beef, thinly sliced, roasted red peppers, and a good provolone cheese. Also I love nice fresh Portugese buns, (crispy on the outside and soft and yeasty on the inside) Mmmmm, now I'm hungry.

it relatively is probably no longer a deli sandwich, yet you may get the beef at a deli counter and in simple terms throw it jointly at abode. A Spanish crimson meat (pernil) sandwich on white bread with mayonnaise and dill pickles tastes tremendously good.

for a great grilled cheese (classic and necessity):
at least two cheeses- cheddar, mozzarella, swiss,
bread: either a croisant (extra buttery) or sourdough with a little olive oil drizzled on top.
toast so that cheese is not still stiff, but not so long that cheese is runny and nasty.
try adding a little cayenne pepper inside or even spicy mustard for a good kick.
"Not yo momma's grilled cheese"
for an excellent chicken salad:
sourdough bread or wheat bread or even pita slices.
crunchy chicken salad but not with fruit--Arby's chicken salad with apples is disgusting in my opinion.
a little paprika is a nice touch.
"The Rooster"
turkey
light, crispy french bread/baguette
boar's head turkey
spicy mustard
lettuce, tomato, mayo, and a pickle on the side
"Turkey lips"

This one's a bit iffy for most people but I loved it as a child, and forget to make it now for myself, but anyway, Cheese & Jam Sandwich. Thick crusty White Bread, Chedder cheese thinly sliced, and Strawberry jam with no lumps in. Try it and see.

Double Homous Sandwiches
Ingredients
thinly sliced cucumber pieces
thinly sliced tomato pieces
homous
vegan cream cheese
sun dried tomato paste
4 slices of wholemeal bread
On the first slice of bread spread with cream cheese and put your on the top cucumber . Then place another piece of bread on top and spread thickly with homous. Then add another slice of bread and spread with sun dried tomato paste and then place on your tomato. Finally add the last piece of bread and cut up.

These have become a Friday evening supper for us:
BLOATS:
Bacon (applewood smoked)
Lettuce ( butter or bibb lettuce)
Onion (Red, thinly sliced)
Avocado (thinly sliced)
Tomato (heirloom variety)
Bread: my favorite is Orowheat 3 Seed Oatnut Bread, lightly toasted and spread with mayonnaise........Try one of these, and you'll never go back to the ol' BLT or in UK the bacon sarnie.....Enjoy!!
