During the 2002 Olympics, I am pretty sure I saw a pin with a casserole on it.

I am pretty sure it includes frozen hashbrowns and a couple of cans of soup. It is the kind of thing you take with you to a wake.

Thanks!

o.k. This is one I have to answer. Yes, I am LDS, and NO it doesn't take 10 of us to make it! ( good one, though)

1-32 oz shredded frozen hash browns (or you could cook up some peeled potatoes and then shred them yourself--then you would need 10 Mormon women to help!---abt 6-8 potatoes)
3-4 sliced green onions, or more if you want or if they are small
1 cup sour cream
2 cans cream or chicken or mushroom soup (1 can w/1/2can milk if desired...I prefer it creamy so I use two cans of soup)
shredded cheese (opt) however much you want
1/2 cube melted butter
salt, pepper
Mix these all together, adding the potatoes last, Fold in so as not to break up the potatoes. Pour into a buttered dish. Bake at 350 about 50 minutes. Top with crushed corn flakes. This will be a 9x13 size. Good Eating.
BTW....Not only do we call them 'Funeral Potatoes' but we also call them "Holiday Potatoes' I guess, us Mormons make them for every special ocassion...funerals, holidays, birthdays!!

Got this from my moms LDS (mormon) ward cookbook.

Ham and Potato casserole (you can omit the ham)

3 cups Frozen O'brien potatoes ( I have used shredded potatoes)
1 can cream of chicken
1 cup sour cream
1 cup cubed ham
1cup croutons or bread crumbs for topping (toast also works)

Mix first 4 ingredient in a baking dish
Top with croutons
Bake at 400 for 45 min

One woman can't make it, you need like 10 women to make a Mormon potato casserole.
