My question is if the cream cheese (I assume) used in cheesecakes has some kind of fermentation or maturation?

It's definitely cheese. Otherwise they wouldn't be able to use the word "cheese" in the name. There is a lot of milk fat (cream) in cream cheese, which is what makes it a lot smoother than hard cheeses.

Enzymes are added to milk to turn it into cheese. There's no fermentation involved. Cheeses can be aged sometimes, but in the case of cream cheese, they don't want that flavor that aging produces. It wouldn't get aged at all.

Yes, cream cheese is used to make cheesecake. As far as I know cream cheese is real cheese of a soft variety.

American cheese is actually just imitation cheese if you read most of the wrappers they come in. What imitation cheese is, I don't know, maybe a wannabe slice. As for me I live in Wisconsin where they make real cheese which is great. In Europe they have no need for American/imitation cheese.

A cheesecake is made with cheese and dairy products as such will spoil. It should be kept refrigerated. My sister in law made 2 pumpkin cheese cakes forgot to refrigerate them and had to throw them away because they had spoiled.

Cheesecakes do contain real cheese, usually ricotta cheese, havarti, quark, twaróg, or, more usually, cream cheese.
