The starch makes it sticky - try throwing a little bit of butter or margarine in the water when you boil it and it won't stick.

Do you mean how fresh after you take it off or how fresh in the fridge? I usually avoid letting pasta sit, and while I'm not a huge fan of reheated pasta. . .if you put it in the microwave it will get too dry - if its just regular spaghetti, try running it under hot water in a colander until its warm - then just make the sauce really hot and it wont taste as dry. I would throw it out after a day

I don't know. But I do know how to make pasta "un" sticky. Put the hot pasta in the collander in the sink and run hot water over it. That washes away the starch and stickiness. Let it sit a few minutes and serve. Pasta is best served hot, so more than 15 is bad (it will cool too much). Keep it warm and you'll be fine.

The starch makes it sticky. After you've drained it, rinse it with warm water while it's still in the drainer to get the excess starch off. If it sits out more than an hour and a half I'd toss it because it starts to dry out. If you put in a sealed container you can reheat it the next day (up to two days).

The gluten (starches) are what make it sticky. It stays fresh for about 10-15 minutes once removed from the water and drained.

In spaghetti the starch makes it sticky. I don't know about how long it lasts but it it usually doesn't last long at our house. plus I don't see why you want reheated spaghetti.

to prevent the sticky mess, you need to drain the pasta and run water over the pasta while running your clean fingers through it.
