The tree of knowledge of good and evil clearly represents the law that judges the sinner and finds us lacking. I don't think that they ever seen the tree of life which represents God's grace or Jesus Christ. Eating the fruit of salvation be fore the law would have been interesting but clearly not in God's plan thereofore I'm not thinking it was an option although it was there I wonder if it wasn't something they were incapaable of seeing until after they realized they had a need for it. It is clearly the reason today we seek the truth because we value it and realize the need for it. Eve when asked about the trees seemed to only be aware of the one tree in the midst of the garden. Perhaps after eating of the knowledge of good and evil then the tree became apparent?

You are mistaken about the tree of life. Both Adam and Eve could and did eat from the tree of life. After committing the first sin they were removed from the Garden of Eden so that they would no longer have access to the tree of life.
When they ate from the forbidden tree of knowledge of good and evil both died a spiritual death. As a result man only has a duel nature, natural or physical man and his soul or non-physical nature. It is only when we are re-born in spirit that we become the complete creation we were in the beginning giving us a body, soul and spirit. This is also why we are called a new creation since our heart of clay has been replaced with a heart of flesh and our new spirit is God breathed.

Actually, if A & E would have eaten from the tree of life, they would not have needed to breed all of us. It may have happened, but not necessarily. Only the Tree of Knowledge was forbidden.
Since God limits the life span of humanity after the sin, we can surpose that without it, Grandma Eve would still be learning how to make a decent apple pie w/o apples.

If they had eaten from the tree of life, they would be immortal. Any offspring they would have created would have been immortal too. The problem with immortality is do you stay youthful or do you just keep growing and growing so elderly that you simply cease to exist because your skin and what not would be so aged. Impossible, if you're immortal you never die. In any event, the world would become so polluted with people that it would be inhabitable. They would have to either ban pro-creation, which is against what God says in Genesis, or people would have to live just standing in one spot with people in all directions just bunched together all over the face of the land. I wouldn't want to live there.

They probably DID eat from the Tree of Life and would have lived forever in the Garden free to eat from that tree. I would guess it was not a one-time eating of the fruit that would have given them eternal life but a continual, regular eating. (Just like eating oranges from an orange tree to give you Vitamin C.)
God had not set up any rules for the Tree of Life like He had for the other tree.

So if we never developed consciousness, we would still be ape like. That is the answer.
