Death is a sacrifice. You are giving up something forever, that doesn't necessarily need to be eternal, but something that is expected to last for sometime and has some worth. If you are a fireman and willing to give up your life to save other people's life from dying then this is an example of willingness to sacrifice. You don't expect to live forever but you are willing to give up another (expected) 40-50 years of your life for other lives. If you have cancer and expected to die in a few days in the hospital, your life can't be sacrificed because your are not giving up anything in the first place. I can be wrong in this case if really those 3 days left have a real worth, like seeing your beloved for the last time, etc. But I think you got the point
What isn't really a sacrifice is Jesus giving up 3 days of his eternal life! But lets say he sacrificed his life for our sins, so he is supposed to stay dead forever, right! After all when you give something up you don't expect it back. But he didn't, it wasn't a sacrifice. if anything it was 72 hours of sleep.
Another thing. Why God would want us to give up our lives. That wouldn't make sense if he created us in the first place. He can make new lives instead. Also there is nothing called the "Soul". Today we know 100% of all causes of death and nothing had to do with a mysterious non-physical crap. So he can't ask for more soul (like he's addicted to it or something). One possible explanation is that its all a test (like what he did to Abraham), training people for complete obedience. Since God uses tests, therefore he doesn't know the future, and thus not omniscient! Another explanation is that he loves to see us suffer. In this case God is a D!CK.

When you give up something of value for another person, it is a sacrifice. Dying for another is a sacrifice. The firemen who went into the World Trade Centers knowing that they would probably never get out were true heroes - they sacrificed their lives for others.
The sacrifice that Jesus made, however, was not just His physical death - it was separation from God at the time He had all the sins of the world laid upon Him. His sacrifice was greater than any could ever comprehend.

If your life is taken as an offering that is a sacrifice. Usually to appease or anger or get help or a curse from a deity. Life is the most precious thing ever for us humans and to give or take that life is a reason to believe in something besides our mortality.

Let's see if I understand your question...
Since this guy is going to die anyways, how is killing himself a sacrifice? It's that just closing the inevitable?
Okay, what you are sacrificing is you pain of death and you're remaining years. It's the action and the choice that they notice.

If by 'sacrifice' you mean atonement for sin...
Death is a sacrifice for sin because sin must be atoned only through blood. Hence, blood sacrifice. The punishment for sin is death, so a sacrifice to avoid death.. is death (through things other than yourself: oxen, lambs, JESUS)
Jesus was God, therefore immortal (yeah he died but he was resurrected, proving he was the immortal son of God) and he died to atone for everyone's sins, instead of killing lambs.
Jesus=Lamb of God (prophecied by Isaiah)

when you give yourself over to the Spirit of God. and when you pass on from this world it will lead you to heaven where I hope be a co worker with God in some way. that is in a sense a sacrifice I suppose.

if we accept the premise that a person wants to live, and then for some honorable reason gives living up then that would be a sacrifice.
