Besides french fries, does anyone have any good suggestions for side dishes that go well with fish? I'm cooking fish tonight and would like a good meal, something different from french fries. Thanks everyone!

Vegetable Kabobs with Rice
INGREDIENTS

1/2 cup Italian salad dressing
1 tablespoon minced fresh parsley
1 teaspoon dried basil
2 medium yellow squash, cut into 1 inch pieces
8 small boiling onions, peeled
8 cherry tomatoes
8 medium fresh mushrooms
2 cups hot cooked rice

DIRECTIONS

In a small bowl, combine dressing, parsley and basil. Alternate the vegetables on eight skewers. Place on a gill rack over medium-hot coals. Baste with dressing mixture and turn frequently for 15 minutes or until vegetables are tender. To serve, place 1/2 cup rice on each place and top with two kabobs.

Rice goes great with mostly anything. Make the rice extra flavorful by cooking it in stock instead of water. Add a side a veggies like sauteed green beans with garlic and olive oil and you've got a complete and healthy meal.

Sauted squash/zucchini.

Cut your squash and zucchini into strips (about the size of french fries) or rounds and stir-fry in a skillet with a little olive oil, maybe throw in some ground black pepper, although it is completely according to your taste, until they are warm through!

It goes with fried or baked fish and is good for you too!

My mom makes the fish with a side of batata. It sounds funny but its a kind of potatoish vegetable. Then she adds a corn on the cob or asparagus. SHe takes about 1-2 tsp of fresh olive oil and pours it on everything. It looks so darn good! I finally had some and it was terrific! SO very healthy too! oh god! I think it moved!

With fish I really like to make rice (plain white or brown) but use half broth (chicken, seafood, or vegetable) in place of half the water and add a sprig or two of fresh thyme. I also like throwing in peas & carrots (I usually use the frozen ones which I warm up in the microwave & then mix in the cooked rice). Rachael Ray has a fantastic Lemon Thyme Rice in one of her cookbooks (You might be able to find it on Food Network's website). It uses the broth & thyme like I said above (that's where I got the idea for the thyme) but she adds lemon to it - just enough for flavor, it's not tart at all! Lemon always goes well with fish, if you like it. Good luck - enjoy!

I like lemon mashed potatoes and roasted asparagus or carrots.

Lemon Mashers - peel, cut, and boil potatoes in salted water until soft, drain, mash and add olive oil, juice, and zest of 1 lemon and salt & pepper to taste....very good with fish.

Toss veggie with olive oil seasoned salt, and pepper. Place on a baking sheet and roast at 400 degrees until brown.

Wild rice is always good. You can buy those bags of seasoned rice that only need to be th rown in the microwave for a few minutes. Super easy, many choices and really good.

My favorite place to find recipes is the FoodNetwork.com. Also fish and Jasmine rice with steamed asparagus is great.
