Nigel Slater's excellent recipe book "Real Fast Food" has a number of ideas for using sardines.
This is a very tasty one:
Sardine And Smoked Oyster Savoury
1 tin smoked oysters
1 tin sardines
Knob of butter
Lemon Juice
Cayenne Pepper
2 rounds wholemeal toast
Drain the smoked oysters of oil. Roughly flake the sardines. Add a knob of butter, a drop of lemon juice and a pinch of cayenne pepper. Spread this mixture on toast and cook under a preheated hot grill until bubbling - just a couple of minutes.
I have listed details of the book below.
I am a huge fan of sardines - and the tinned ones are great. I think they are even tastier than fresh ones - certain tins are listed as vintages, just like wine. One of my favourite snacks has to be a tin of Waitrose Sardine Piccante with scrambled egg on a toasted muffin - I just had this for my brunch - delicious. Thank God for sardines.

Chop some garlic and onion, saute in olive oil until onion is soft, add a can of crushed tomatos some dried oregano and basil, drain sardines and add to pan and simmer for about 1/2 hour. Serve as a spaghetti sauce.

A chopped clove of garlic will transform them - especially with a dash of balsamic vinegar - roughly mashed and eaten on piping hot wholemeal brown toast.

in the back of the cupboard???????
i guess they're tinned, so just eat them with some warm buttered toast or just plain old fresh bread.
i suggest you get some fresh ones and simply grill them with lemon, black pepper and olive oil
