Ingredients
2 oz vegan margarine
1 oz sugar
4oz flour
1 teaspoon ground ginger
Blend the margarine with the sugar until it is a smooth paste. Add the ginger and flour and blend thoroughly. If it too dry add a teaspoon of water - it should come together in a dough. Roll out on a floured surface and cut out using a cookie cutter. Place on a greased baking sheet in a 200 degree oven for 10 minutes or until golden brown.

1/3 cup butter or margarine 1/2 tsp. baking powder
1 egg 1/2 tsp. salt
1/2 tsp. vanilla sweet chocolate melted
pistachio nuts, chopped
Mix sugar, butter, egg, and flavoring well. Stir dry ingredients together and blend into shortening mixture. Chill 1 hr.
Heat oven to 400 degrees. Roll dough 1/8 in thich on foured board. Cut into small stars. Bake on undreased baking sheet 6 to 8 min, until lightly browned. Cool. Put two cookies together with melted sweet chocolate; add a dab of chocolate and sprinkling of pistachio nuts on top.
Gingerbread Boys
1/3 cup shortening
1 tsp. salt
1 cup brown sugar (packed)
1 tsp. allspice
1 1/2 cups dark molasses
1 tsp. ginger
2/3 cup cold water
1 tsp. cloves
7 cups flour
1 tsp. cinnamon
2 tsp baking soda
Mix shortening, sugar, and molasses thoroughly. Stir in water. Blend all dry ingredients blend into wet. Chill.
Heat oven to 350 degress. Roll dough 3/4 inch thick on lightly floured board. Cut with gingerbread cookie cutter (or your favorite cutter) Place far apart on lightly greased baking sheet. Bake 10 to 12 min, or until no imprint remains when touched lightly. Decorate cooled cookies.
