all these are good but you need to replace the brown sugar with 1/2 cup molasses.

Best Ever Cowboy Cookies -
2 c rolled oats
2 c flour
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/8 tsp cinnamon
1 c butter, softened
1 c packed light brown sugar
2/3 c sugar
2 eggs, at room temperature
1 tsp vanilla
2 c semisweet chocolated chips
1 c chopped walnuts
In a large bowl, stir together the oats, flour, baking soda, baking
powder, salt and cinnamon. In a separate bowl, blend the butter and sugars with an electric mixer until smooth, about 2 minutes. Add the eggs and continue to beat until fluffy, about 1 1/2 min. Blend in the vanilla extract. Using a wooden spoon, stir the dry mixture into the butter mixture one half at a time. Mix in teh chocolate chips and walnuts. Regrigerate the dough for 1-2 hours. Heat the oven to 350. Line a baking sheet with aluminum foil, then gerase the foil. Using a scant 1/4 c per cookie, shape sough into balls and and place them on sheet about 2 inches apart. Use your fingetrtips to flatten each ball to 1/3 inch thick. Bake on center oven rack for 13-14 min, turning the sheet
about halfway through. When they're done, the cookies should be very lightly browned and still moist. Don't overbake them. Cool the cookies on the baking sheet for 2-3 min, then transfer them to a wire rack.

1 cup chopped toasted walnuts (about 4 ounces)
Whisk first 5 ingredients in medium bowl to blend, then set aside. Using an electric mixer, beat the butter and both sugars in a large bowl until light and fluffy. Add eggs and vanilla. Mix thoroughly. Add dry ingredients and beat until just blended. Stir in chocolate chips and walnuts. Cover dough and chill 1 hour. Preheat oven to 350 F. Form dough into balls, using 1/4 cup dough for each. Place on greased baking sheets, spacing 2 inches apart. Flatten with hand to 3-1/2-inch rounds. Bake 10-15 minutes or until cookies are golden brown around edges and firm in center. Transfer to cooling racks to cool completely.

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar

1 teaspoon vanilla extract
2 cups rolled oats
1 cup semisweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets. Sift together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Gradually stir in the sifted ingredients. Stir in the rolled oats and chocolate chips. Drop by rounded teaspoonfuls onto the prepared baking sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheets for 5 minutes before removing.

COWBOY COOKIE RECIPE
1 cup soft shortening or margarine
3/4 cup brown sugar, packed
3/4 cup granulated sugar
2 eggs
1 tsp. vanilla extract
2 cups flour
1/2 tsp. baking soda

1-1/2 tsp cups quick cooking oatmeal
1/2 cup coarsely chopped nuts or wheat germ
6 ozs. chocolate chips
1 cup raisins
Cream shortening, add sugars and beat well. Add the eggs and vanilla, stir to blend well. Add the dry ingredients at one time, mix to blend throughly. Last, stir in oatmeal, nuts, chocolate chips and raisins. Mix well. Drop by spoonfuls on cookie sheet and bake for 13-15 minutes in 350 oven. This dough freezes well and can be sliced later to make fresh cookies. Makes four dozen large cookies.
