What is the best way to mix two video images side-by-side into a single synchronized image?

I want to have two cameras focused separately on each of two people as they talk to one other, and record a single video capture of their interaction that shows each person simultaneously, side-by-side. Any recommendations about video formats, hardware, etc. are welcome too.

If you can do it in post, it should be pretty easy, just scale two video tracks into one window, or apply a premade effect. If not, then I think you would need a video mixer, something Im not too familiar with. Hope this helped somewhat.
