There are lots of things that those areas are famous for, but I guess it depends on who you ask, and what they are interested in!

For some people, if you ask them about Soho they will tell you all about the artists and galleries. For other people they will tell you about the shopping and boutiques.

The same goes for the Village. You can see historic homes and sites, shop at the Gap or at an underground video/record store!

If you have a couple of days, you can definitely just walk around and see the sights. Stop at Washington Square Park in the middle of the Village, see what's going on.

There are probably more cheap restaurants in the village than in Soho, especially around the NYU area. Walk up and down Bleeker Street for cafes, pizza and cheap music/beers. There are some smaller independent movie theaters if you like indie flicks.

If there is something you are interested in, plan it out ahead of time. You shouldn't have trouble finding something to entertain you!

Greenwich Village is an artys place that has lots of pubs and restaurants. It's near 9th St. and Ave. of the Americas. Several entertainers got their starts in showbiz in clubs there. Today, celebrities hang out in pubs there sometimes. Somebody mentioned that it is a gay hangout too, but to me it was more like a college part of town. Greenwich Village is a good choice. Sorry, but I don't know anything about Soho.
