Sage and Apple Dressing
8 Cups cubed stale bread (about 12 slices)
2 stalks celery, chopped
1 large onion, chopped
4 apples, peeled, cored, && chopped
1-1/2 tsp sage, rubbed dried
1 tsp thyme, dried
1/2 Cup chopped cranberries
1-1/2 Cup vegetable stock
salt && pepper to taste
Preheat oven to 350 degrees F. Spread bread cubes on a
baking sheet and toast for 15 or 20 minutes, until
lightly toasted.
Heat a large non-stick skillet over medium heat. Put
celery and onion into skillet, cover, and allow to sweat
for 5 minutes. Add two Tbsp of the stock and stir
to release any browned bits. Simmer until liquid
evaporates. Add apples && two more Tbsp of stock &&
simmer, stirring, until liquid evaporates. Stir in sage,
thyme, && 1/4 cup of stock, cover, reduce heat to low,
&& simmer until apples are tender, 5 or 6 minutes.
Pour bread mixture into a large bowl, mix in cranberries,
drizzle with remaining stock, && season with salt && pepper.
Transfer to a 10-cup casserole, lightly coated with
non-stick spray, cover, && bake in a 325 degree F oven
for 35 to 45 minutes.

What ever you put into it use as a base pinhead oatmeal and onions you can then leave it at just that. or. add ingredients to your taste it doesn't end up as a smooth paste a tip is always make 2
types off stuffing in the same bird of course then you accommodate most tastes

This is nice stuffing and easy ----- buy as usual small packet of stuffing either sage and onion ---- or parsley and thyme --- or parsley thyme and lemon ----- place whichever one you have choosen into a bowl to that add i small clove or garlic if you like and add brown bread crumbs made from 4 slices of bread mix with enough hot water to bind it together and a nice knob of butter.
If you do not like garlic then replace it with chopped up chestnuts.
Seeing as you usually use sausage meat you could even add that as well if you wish to either of these recipes.

Add in some chopped celery, roasted chestnuts, cranberries and apples and that will enhance the sausage and onion stuffing mix. Also put in some herbs like rosemary, tarragon and thyme to provide more flavors.

Christmas Cranberry Bread Stuffing Recipe
Ingredients:
1 1/2 cup fresh cranberries
4 cups dried bread crumbs
1/2 cup melted butter
3 tablespoons granulated white sugar
1/2 cup finely minced onion
1/2 cup finely diced celery
1/2 teaspoon dried marjoram
1 teaspoon salt
1 teaspoon ground sage
1 dash black pepper
1 dash dried mace
1 dash dried thyme
1 dash dried oregano
1 clove garlic (minced)
Directions:
Puree cranberries in food processor. Place cranberry puree in saucepan with bread cubes, butter, sugar, onion, celery, marjoram, salt, sage, pepper, mace, thyme, oregano and garlic. Mix well and cook over medium heat, stirring constantly, about 10 minutes. Cool before stuffing bird.
Makes enough stuffing for 1 (8 to 10 pound) turkey.

Try making your own from scratch, with dried bread crumbs, onions, celery, butter and chicken stock. Toss in some dried cranberries and pine nuts.

dried apricots soaked in a bit of brandy, roll the stuffing into a 'log' and wrap in bacon. cover in lightly greased tinfoil and bake in oven on a tray with alittle water.
