Use any good quality milk chocolate. Plain chocolate can be quite bitter.

Whether you use dark or milk or semi-sweet depends on your taste. I typically use a semi-sweet because it works for everyone-not too sweet and not too bitter. As far as brand-go for a really good quality chocolate-like Guittards or Green and Blacks-don't use hersheys-it comes out horrible. If you are using a fondue fountain you need to make sure you add extra cream or a fat to it to thin it out and keep it running through the fountain. Hope this helps!

I like semi-sweet. Milk chocolate burns very easily.
