Hard Boil your eggs. While they are cooking, chop up some celery real fine. When the eggs are done cooking, they need to cool off. I empty the water out of the pan and fill it with cold water, let them sit for a while, empty that water out and refill again with more cold water, let that sit. Some people put them into the fridge to cool off. Once they are cooled off enough, peel the shell off. put the peeled eggs into a mixing bowl and mash them up (with a potatoe masher or whatever you can to mash them up fine). Add mayo (the amount of may depends on how many eggs you are using- if I cook 6 eggs, I will start with 2 table spoons of mayo and add more once I start stirring it all up if it looks dry), add celery and stir. Dont start with too much mayo because once it's in there, you can't take it back. It's better to start with too little and add as needed. If you find out you do have too much mayo there are 2 things you can do. Either cook more eggs or break apart white bread and add it in there. The bread will absorb the mayo and nobody will ever even know it's there. Resteraunts do this all the time to make the product go further for less money. Good Luck!

A few (cooled) chopped hard boiled eggs, a little mustard and some mayo or Miracle Whip. Stir it all up together, and WA-LA.....egg salad. However, I do not eat it, this is the way my Mom made it.

"This is my favorite recipe for egg salad because it uses little mayonnaise and plenty of dill."

Original recipe yield:

SERVINGS About scaling and conversions

INGREDIENTS
8 eggs
1 tablespoon mayonnaise
2 tablespoons prepared Dijon-style mustard
1 teaspoon dried dill weed
1 teaspoon paprika
1/2 red onion, minced
salt and pepper to taste
DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
Serve on bread as a sandwich or over crisp lettuce as a salad.

What you need:
12 hard-cooked eggs, peeled and chopped
1/2 cup light mayonnaise
1/2 cup low-fat sour cream
1/4 teaspoon paprika
3 tablespoons Dijon mustard
2 tablespoons prepared horseradish
2 tablespoons chopped red onion
1/4 cup real bacon bits
salt and pepper to taste
What you do:
In a medium bowl, stir together the eggs, mayonnaise, sour cream, paprika, mustard, horseradish, red onion and bacon bits. Season with salt and pepper to taste. Serve immediately, or refrigerate until serving.

this is how i make it...
hard boil eggs (the number depends on how much i want to make....if it's just to make myelf a sandwhich, then one or two eggs)
...peel and chop the eggs (i like mine a little chunkier, so i don't chop the eggs real small)
...mix in a little mayo and mustard and salt and pepper (all to taste...i like my sandwhich a little on the "dry" side, so i don't use a lot of mayo or mustard)
.....spread on your favorite bread...yum!
(by the way...i used to go to this deli where they added a little sugar to their egg salad....i prefer it without, but it's pretty good if you want to try something different)

hard boil eggs cut em up or mash em if you want them squashier add mayo and mustard to taste- you can also use dry mustard if you want. that's basic egg salad now you can add whatever you want- celery, onion, whatever- I knew a guy who like capers in his egg salad!

Chopped up boiled eggs,mayo(little at a time)pickle relish(to your taste)little dab of mustard----you can put a variety of thing in egg salad, but this is good in a sandwich.......Mix all until creamy and spreadable........ENJOY

Hard-cook 6 eggs; Grate on large holes of grater. Add S&P, a bit of mayo, bit of yellow mustard

Stir all together, add minced celery if you like crunch.
