I have half a gallon of heavy whipping cream that will expire soon and I need ideas on what to do with it. I will be making caramel with some of it.
Any ideas are helpful. Thanks!

Whip the leftover cream. Put waxed paper on a small cookie sheet and drop dollops of whipped cream on it. Pop the cookie sheet in the freezer and freeze the whipped cream. When they are solid, put them in a zip top bag in the freezer.

I use the frozen whipped cream to top hot chocolate or pie. You can thaw them on a plate for a few minutes and top cake or other desserts. They don't last long in my house, so I can't really say how long you can store them. I haven't had a problem yet and they taste fine.

Make whipped cream to go with the caramel. Just add some sugar and whip it around until it gets thick.

Cream Dill Sauce
INGREDIENTS
1 cup sour cream
3/4 cup mayonnaise
2 tablespoons finely chopped green onions
2 teaspoons dried dill weed
2 tablespoons lemon juice

DIRECTIONS

In a medium bowl combine sour cream, mayonnaise, green onions, dill and lemon juice. Mix well and chill for at least 1 hour.

I made this and poured it over chicken breasts, and baked it for 25-30 mins at 350. It was really really good! I served it with some pasta tossed in parmesan and garlic butter. Really tasty, and quite quick too, which is always a bonus.

Put it in a blender and whip it till it looks like butter. Freeze it for cooking when needed.

Warm some up with garlic, then stir in some parmesan cheese and you'll have a great sauce for your pasta. I personally add some shrimp as well.

Beat it with a electric mixer and it will turn into butter, add a little salt.
