I don't know how you've seasoned the meat so far, but you could make BBQ sandwiches out of it. Just shred the meat and simmer with your favorite BBQ sauce. Then serve on buns. I've done this and it's really good. You can also serve with gravy over toast.

Serving Size : 4
1 teaspoon vegetable oil
2 boneless pork loin chops, trimmed of fat and thinly sliced, about 8 ounces
1 bunch scallions, washed, dried and diagonally sliced into 1-inch strips
1 16-ounce bag shredded cabbage for coleslaw
1 cup shredded carrots (optional)
1 cup sliced fresh mushrooms
1 teaspoon minced garlic
1/2 cup Teriyaki Baste and Glaze
1/4 cup water
8 flour tortillas
Hoisin sauce
Place a large skillet with a tight-fitting lid over medium-high heat. Add the oil and pork slices and saute 1 minute. Add the scallions, cabbage, carrots (if desired) and mushrooms. Stir well, and saute 3 minutes.
While the pork and vegetables cook, combine the garlic, Teriyaki baste and water in a small bowl. Pour over pork and vegetable mixture, stirring well. Reduce heat, cover and simmer for 7 to 10 minutes, until vegetables are very tender.
Spread the tortillas with desired amount of Hoisin sauce, and top with some of the pork and cabbage mixture.

Shred the meat. Pan fry it in bacon fat or other pork fat, until bits are crispy. add cumin and chili powder and stir for a minute, then add a bit of salsa and cook until mostly dry, a minute or two. Use in warm corn tortillas with shredded cabbage, radish, pickled onion, and fresh pico (tomato, red onion, jalapeno, cilantro, lime and salt). or use it in a hash. based on a Julia Child technique, I first slowly cook a chopped onion about 10 minutes in a nonstick skillet. Add diced potato, one per person, and saute briefly. Add broth and cover, simmer for a few minutes until potato is tender. Uncover and boil off liquid. Add cooked meat, cooked veg if you want, and any pan juices or gravy from the roast if you have it (I often use just meat). Slowly cook and add seasonings--salt and pepper and any other flavoring you want. When crust forms, mix it all up and cook again to make more crust. I do this 2-3 times. On the last stir up, I add a bit of grated cheese and parsley. I like it very well browned. I always eat it wtih poached egg--good for any meal.

If you have gravy; make Hot pork sandwiches! A slice of bread on a plate, add slices of warmed pork roast drenched in gravy, one more slice of bread and more gravy - served with mashed potatoes.

You can make tacos. Yum
cut up some onion and mince some garlic and saute in oil
then add some tomatoes and saute til tender
season with a pinch of cumin, garlic powder, onion powder, salt and pepper.
add the cut up pork with a bit of water and let it simmer for about 20 minutes to let the flavors blend and add more water if it gets too dry
Heat up some corn tortillas and you're ready to feast

Shread pork. Put it on top of 2 slices of white bread. Put pork gravy on top. Heat in microwave. Top with a slice of cranberry sauce. You have an hot open pork sandwich. Simple and filling.
