fonts 10-12 are generally accepted, always use Arial or Times New Roman as any other font will look strange on someone else's PC if they don't have the same font as you have chosen to use. but those two are pretty standard

Times New Roman is really the Standard for most things. You can also try Arial. These are the two easiest fonts to read. I would stay at point 12 size; definitely not anything over 14 or under 10. Courier could be a nice choice if you wanted what you are typing to seem as if if came from a typewriter. It is also the standard for plays.

In most business I have worked for, Times New Roman Font Size 12 is the most common.

About a year ago, there was a survey ran globably asking top 100 companies and end users the best, clearest, most readable and presentable font. The font that came out on top was 'Trebuchet MS'.

The standard formal font size is 12, but this is not a must.

When writing, doesn't matter. Set it to whatever makes you comfortable. AFTER writing, when submitting, read the specific requirements of each publisher you are submitting to. Many have clear guidelines on such things - 12-pt font single spaces, 10-pt font double spaces, etc. But since it is a computer, you can change that later as needed. First you have to write the thing and for that its all you and doesn't matter what you use. There is no limit to the number of chapters, but again, look at the guidelines of the people you are looking to submit to. Many have word count limits. And may even be advertising specifically what they want, like Young Adult paranormal fiction about ghosts 50-80k words in length.

Arial size 12 is the standard in business only because that is the default in Word.

I use Times New Roman at size 10 because that looks the most professional. It also makes sure that I and l do not look the same, as you can see here. The first letter is an i capitalized and the second letter is a small L.

New Times Roman or Georgia font and size 12 is what I usually use.

Always use an easy to read font that has a serif because it's easier to read. A serif is one of those little "flags" to it. (Your question appears in a sans-serif font [without the little flags].) I prefer Times New Roman 12 pt.

It is not encouraged to right justify the margin in a formal/business letter because the eye has more difficulty in reading it.

You never ever double space a business letter unless it is only a couple of lines long.
