Gravy with mashed, also once tried brown gravy on french fries at the suggestion of a friend, it was really good. Baked potato - definetly sour cream, chives and crispy bacon bits - real bacon not that ersatz crap. Baked stuffed with cheese and broccoli is also really great. SPUDS ARE SOOOO GOOOOD!

It depends on what type of taters. Tater tots: Gravy. Get the chicken tender meal from sonic and dip your tots in the gravy. It's really good.

When it comes to baked potatoes, I like them with salt and butter, or one time I made it with broccoli and cheese on top. Sour cream would be good, but there's rarely sour cream at the house.

For french fries I like gravy on them sometimes. Or cheese melted in a bechamel sauce.

For sweet potatoes, I like butter and brown sugar.

both. I had this loaded baked potato mashed taters with gravy and sour cream and cheese and bacon bits and chives....IT WAS GOOD!!!

mashed tators: cheese IN my mashed
tots: chili and cheese
baked: ranch dressing
fries: nothing just seasoned salt
potato skins: bacon, chesse, sour cream and green onions

or

recipe for twice baked potatoes
Mashed potatoes as directed if using instant use less water that called for (using sour cream of part of the water and milk)
then
add sour cream, shredded cheddar cheese, cooked bacon bits, and diced green onions
put into geased baking pan and bake (350 for 35 minutes) until nice and warm sprinkle with cheese and/or french fried onion rings the last few minutes ---- YUM!

Kinda depends on what the main course is. If it's roast beef or roast chicken, gravy might be better. If it's filet mignon or a delicate seafood dish, the sour cream might work better.
