Open a can of pineapple chunks. Slice a couple thinly. Chunk of some ham. Use jarred pizza sauce and make minature pizza's on Engligh Muffin halves. This will be great....is there a kid who doesn't like pizza? AND if you need to add vegetables....THINLY slice some zuccini and if necessary hide it under the cheese on the pizza................broil till bubbly!

Herb-Roasted Potatoes
2 pounds red new potatoes, quartered
1/4 cup extra-virgin olive oil
Leaves from 1/4 bunch fresh thyme
Salt
Preheat the oven to 375 degrees F. Toss together the potatoes, oil, and thyme, and sprinkle with salt. Dump the potatoes out on a baking sheet and roast until tender and crisp on the edges, 30 to 40 minutes.

I was going to say Mac and Cheese and Mashed Potatoes, because I thought every kid loved them. :) I still have to fix those for my almost grown kids. But if yours won't eat them, just fix what you normal fix them for the dinner. If they like french fries or tater tots fix that instead of the mashed ones. And of course make some jello for them.

maybe if you dont mash them, but dice them cook them in the oven with salt and pepper and before you serve them toss them in a light coat of ketchup? kinda like fries...you should be more specific about foods they do like so We can come up with recipes for you =) .

my kids (son especially) are picky. They usually don't do potatoes but they will usually eat anything they have a hand in making. This is easy to make, and they'll have fun doing it (my son is only 4 1/2 daughter is 2, they both love being in the kitchen with me)
Sweetie Potato Pie- Kids In The Kitchen Cookbook- The Pampered Chef
1 can (40oz) cut sweet potatoes in light syrup
¾ tsp ground cinnamon
¼ tsp salt
15 regular sized marshmallows
1.Preheat oven to 350ºF. Drain sweet potatoes in colander; discard syrup. Place potatoes in Classic Batter bowl.
2.Sprinkle cinnamon and salt over potatoes. Mash until smooth using Nylon Masher.
3.Attach Open Star Tip to Easy Accent Decorator. Using Medium Scoop, scoop potatoes into tube (not all of the potatoes will fit in the beginning)
4.In Stoneware Pie Plate, hold decorator straight up and down with tip about 1 inch above the center of the plate. Gently squeeze down trigger to form a star. Stop pressure and pull decorator up. Continue to fill the pie plate with “stars” until all the potatoes are used up. Refill the decorator as needed.
5.Place marshmallows on their sides around the edge of the pie plate, on top of the potatoes.
6.Adult help: Bake 14-16 minutes or until potatoes are heated through and marshmallows are puffed and toasty brown. Using Silicone Oven Mitts, remove pie plate to Stackable Cooling Rack.
Crinkle-Cut Potato Fingers- Kids In The Kitchen Cookbook- The Pampered Chef
4 medium baking potatoes
1 Tbsp mayonnaise
1 package (0.4 oz) dry buttermilk recipe ranch salad dressing mix
1.Preheat oven to 400ºF. Scrub potatoes clean and pat dry with paper towels, but do not peel.
2.Adult help: On cutting board, cut each potato in half lengthwise using Crinkle Cutter. Place potato halves, cut side down, on cutting board. Cut lengthwise into quarters.
3.Place potatoes into Classic Batter Bowl. Add mayonnaise. Cover batter bowl with lid and shake until potatoes are evenly coated. Uncover and sprinkle with dry salad dressing mix over coated potatoes. Cover with lid and shake again until potatoes are evenly coated.
4.Place Large Round Stone in Rack. Arrange potatoes in a single layer with the skin side of the potatoes touching the stone.
5.Adult help: Bake 35-40 minutes or until potatoes are golden brown. Using Silicone Oven Mitts, remove from oven and place on Round Woven Selection.
Cook’s Tip
With the skins left on, potatoes keep more of their nutrients, those things that are good for your body. Some people think potatoes with skins left on are more flavorful, but if you know you don’t like potato skins you can scrub the potatoes and then peel them with the Vegetable Peeler before cutting.
Tool Tip
Using the Crinkle Cutter is a decorative way to cut the potatoes and lots of other vegetables. To use, place one end of the Crinkle Cutter on the Cutting Board and use a rocking motion to cut through foods. Always keep the end closest to your body firmly anchored to the cutting board and fingers out of the way.
