This simple chicken entree recipe cooks entirely in your microwave oven.
INGREDIENTS:
4 boneless, skinless chicken breasts
8 oz. can pineapple chunks, drained, reserving juice
1/4 cup water
2 Tbsp. orange marmalade
1 Tbsp. cornstarch
2 Tbsp. ketchup
dash pepper
1 Tbsp. soy sauce
1 Tbsp. white wine vinegar
1 Tbsp. sugar
1/2 cup halved green grapes
PREPARATION:
Cut chicken into 1" pieces and combine with pineapple chunks in 9" square glass baking dish. Combine pineapple juice, water, marmalade, cornstarch, ketchup, soy sauce and vinegar in 2 cup microwave safe glass measuring cup and mix well to blend.
Microwave on high for 3-4 minutes, or until mixture thickens, stirring once during cooking. Pour over chicken and pineapple in baking dish. Cover with microwave safe waxed paper. Microwave on high for 4-7 minutes or until chicken is no longer pink in center, turning dish once during cooking time. Sprinkle grapes over chicken and microwave on high for 1 more minute. Let stand 3 minutes before serving. 4 servings
Basic Microwaveable Cake
1 c Flour
2/3 c Sugar
1 1/4 ts Baking powder
1/2 ts Salt
1/2 ts Vanilla
2 Eggs
1/3 c Milk
1/3 c Shortening
In mixer bowl, combine flour, sugar, baking powder, salt and vanilla. Add eggs, milk and shortening. Beat at low speed till mixed. Beat at medium speed 2 minutes, scraping bowl occasionally. Spread batter in a 8-by-1 1/2 waxed-paper lined round cake dish. Micro-cook, uncovered, on medium 6 minutes, rotating a quarter turn every 2 minutes. Increase power to 100 percent. Micro-cook, uncovered, 1 1/2 to 5 minutes or until done. Cool on a wire rack 5 to 10 minutes. Remove from pan; cool thoroughly on rack.

Microwave Chicken With Tomatoes for 4
INGREDIENTS:
2 small to medium tomatoes, chopped, about 1 1/4 to 1 1/2 cups diced tomatoes
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/3 cup tomato paste
1 teaspoon chicken bouillon granules or base
1 small clove garlic, minced
1/2 teaspoon sugar
1/2 teaspoon dried leaf basil, crumbled
1/8 teaspoon ground black pepper
4 chicken breast halves or other chicken pieces
PREPARATION:
Place chopped tomato and onion and peppers in a 1 1/2-quart microwave-safe baking dish. Cover and microwave on full power for 3 minutes, or until vegetables are softened and hot.
Add tomato paste, chicken bouillon granules or base, garlic, sugar, and basil.
Arrange chicken in the baking dish with meatiest parts around outer edge of dish. Spoon sauce over top of each piece. Cover and microwave on full power for 7 minutes, rotating dish a half turn halfway through cooking. Microwave at 70% (medium-high) for 11 minutes longer, rotating dish a half turn after 5 minutes, until meat is no longer pink near the bone and juices run clear. Serve with juices spooned over chicken, with rice or noodles and a green vegetable or salad.

all i know how to cook in the microwave are scrambled eggs..
two eggs in a glass bowl, whip them, stir in salt, pepper and a pinch of paprika, onion and garlic powder. Microwave 2min
