I've invited family round christmas eve. Can anyone recommend a 'not to heavy' yet still christmassy recipe or meal idea?

You could do a nice soup and salad dinner. Our family has a tradition of getting together and having chili or Brunswick stew. Though it's 70 degrees hear in Alabama, it's still cold in the evenings and it's nice to eat something warm. You could do any other soup, like a vegetable soup, or a broccoli and cheese. Its a meal that's really easy to prepare, serve, and clean up after. That means more time spent with family and less in the kitchen. Hope you and yours have a Merry Christmas.

We don't like to have a heavy meal on Christmas Eve either, as we will be having a big meal the next day... We have a selection of hot and cold appetizers set out for dinner. Some examples:

tiny meatballs in sauce
crab louis with chunks of bread
prosciutto and melon
puff pastry hors d'oeurves
stuffed mushrooms

This is as simple as it gets! Get some frozen, cooked and peeled shrimp! get some land o' lakes garlic butter! Melt butter in deep pan when it starts boiling add the shrimp! after a few minutes (3-4) turn off and serve over a bed of angel hair pasta with warmed italian bread and a salad from a bag! If you want to have wine, get an italian frescati. It is lite, white, and fruity! The whole meal should take you less than 15 minutes to cook!

(Mom’s Old Fashioned Friday Nite Supper)

2 Cups uncooked quick oats
2 Cups milk
(More ingredients in directions)

Mix and stand aside should wait ½ hour before adding other ingredients so…
Cut up approximately 4 oranges, 6 medium apples, and 3 bananas into bite sizes or slices. After the half hour add fruit and 4 Cups plain yogurt, 1 Cup chopped pecans, and ¼ Cup honey. Mix and eat.

Variations include: strawberries, raspberries, or any other berry. Fresh or frozen fruit may be used.

The meal that we always have for Christmas Eve is a light and easy buffet. We have ham sliced for sandwiches, hoagie rolls, potato salad, fruit salad, pickles, olives and Christmas cookies on a tray. Serve with eggnog, and share memories of the past year! Merry Christmas!!

Lil smokies in BBQ sauce
Cheeseballs and Crackers
Deviled Eggs
Veggie Tray and Dip
Fruit Tray
Couple of Cakes
Cookies.
Maybe try an antipasta salad?

Something light, maybe POACHED CRAB or SMOKED SALMON with Asparagus and cheese sauce. If that doesn't appeal to you how about a cold pork loin, baked turnips, parsnips, carrots, rutabaga, sprayed with olive oil, baked 350 for 30 minutes. Marinate the Pork Loin 24 hours ahead in; soy sauce, honey, brown sugar, cinnamon, garlic, T drinking wine. bake 350 X 45 min. Top off the meal with COLD BERRY PIE, APPLE CIDER. How's this? Merry Christmas!

Smoked Salmon and Cream Cheese Frittata

6 large eggs
2 tablespoons milk
1 tablespoon chopped fresh dill
1 teaspoon kosher salt
Freshly ground black pepper, to taste
2 tablespoons chopped chives
2 ounces cream cheese, softened
2 ounces smoked salmon, chopped
2 teaspoons extra-virgin olive oil

Serving suggestion: Crispy potatoes and mesclun salad

Position a rack in the center of the oven and preheat to 375 degrees F.

Whisk the eggs, milk, dill, salt, pepper, and chives together in a bowl. Using two spoons or your fingers, separate the cream cheese into small clumps. Fold the cream cheese and salmon into the egg mixture.

Heat the oil in a medium non-stick skillet over medium-low heat. Pour the egg mixture into the skillet, and stir lightly to make sure the fillings are evenly arranged in the pan. Cook until the bottom is set, but not brown, about 2 minutes. Transfer the skillet to the oven and bake until the top is set, about 8 minutes. Remove from the oven, cover, and set aside for 5 minutes.

Invert the frittata onto a large plate. Cut into wedges and serve warm or at room temperature.

If you are going to open presents that night, I think finger food or a buffet is nice. that way people can snack and munch during present opening. A ham, cheeses, dips, crackers, fresh fruit, crudites, quiches ( you can decorate them with green and red peppers in the shape of christmas trees- and they can be baked way ahead of time)

Quiches are always great- light, you can make several different kinds for different tastes and before you put then in the oven, make Christmas tree out of green peppers with red, yellow, and orange pepper bits for ornaments. Serve withcrescent rolls, fresh fruit, and dessert- cookies or a light cake

We have always had carnitas and tortillas on Christmas Eve, it may sound un-traditional, but it is Delicious!
You can buy a really good carnitas from COSTCO, along with a mango salsa and fresh guacamole.
