Scholars can tell by the style of the authors that at least three people wrote it. Each wrote a slightly different version and then the stories were all pieced together by redactors. The creation story was most likely taken down by Moses in a very strict verbal sense and was latter written down by a priest later on or some say Moses wrote it down since he was most likely trained in writing growing up in the Pharaoh's house.
The evidence used is that the Bible or even just what is the Old Testament are books of religion and antiquity. More people read and believe the versions of other books of antiquity even though there are only fragments of those documents or maybe one copy, when there are multiple copies of the Old Testament in antiquity. Also since most people believe the world was created, they just disagree on how and since no one was around to tell us directly what happened, one reason may hold as true to one person as another would.
It is classified as nonfiction because it is a religion and belief cannot be counted as fiction.

Moses wrote the first five books of the OLD testament along with the law.... he received what to write along with the ten commandments from the LORD God, the I AM that I AM, YHWH on Mount Sinai.
The Answer to your other questions have been answered thousands of times over thousands of years by thousands of people. A more recent compilation is the book "The Evidence Demands A Verdict" by Josh Mcdowell -- by no means exclusive, complete or comprehensive but is one good example of answers to these questions and more to the open mind. There is still no published academic response to his book(s) and their presentation of the preponderance of evidence that demands a verdict.

The Jews told stories orally. Moses wrote the stories down, at least the first five books of the Old Testament, which includes the account of creation.

In the bible it's says in Hebrew's 11:1 Now faith is the substance of things hope for and the evidence of things not seen.
It also says that all scriptures are given by the inspiration of GOD!So if you believe in Jesus Christ which GOD sent in the world to save us from ours sins, that when it's stops being a opinion and it's fact.What evidence do you have that the sun is going to shine every morning or that your going to wake each morning. Does it matter who wrote the creation story, just believe it by faith. By the way Moses wrote it to answer one of your questions.

Moses under the Inspiration of the Holy Spirit wrote Genesis, the first book in the Bible and
the book of beginnings. The beginning of the world, the beginning of man, and the beginning of
the Hebrew people.

While it might be, what is to say that a lot of "history" is also true? Most of ancient history was passed through word of mouth until written one day. If you are going to say this about creation, then you will have to say this about a lot of ancient history, especially the ones where we have no evidence of.
