definately spring rolls, and i think suck simple veggie sushi would be great, and inexpensive, maybe seaweed salad or a wedge of iceburg on small plates with chopped carrots and cucumber and a store bought ginger dressing. desserts: go w/ a mango sorbet. or a mixed fruit sorbet thai can be sort of heavy and this cleanses the pallete, of course you could even serve a thai tea with dinner

You can get Thai spring rolls and Thai crackers (like prawn crackers but more spicey) in Sainsburys. Also, coconut or sticky rice would obviously be delicious. Maybe chicken/quorn satay sticks too. You should try and get Singa beer to go with it, because that's the Thai beer that everyone drinks and it's really nice when it's well chilled and served in an iced glass. Dessert has to be something chocolatey surely??

Samosas for an appy
Coconut soup
Rice (Coconut or lime flavored)

Thai Iced Coffee

2 tablespoons sugar
3 cups hot brewed French Roast coffee
1 can (14oz) sweetened condensed milk.
Stir sugar and coffee until sugar has dissolved. Transfer to a 8 x 13" glass baking dish. Freeze at least 3 hours or up to 8 hours.
Before dinner, scrape frozen coffee into shavings using a fork. When ready to serve spoon coffee shavings into serving dishes. Serve with condensed milk drizzled over top.
Most of the calories from granita come from the sugar. You can use artificial sweeteners like splenda or the new "shugr" product to reduce calories and carbohydrates.

Stick with the Tai theme. Starters: Perhaps a soup, using coconut, chilli and chicken.
You might also try a mixed starter, perhaps using vegies (Spring rolls, etc.). These might also be used as a side dish, although simple vegies might suffice for this.)
Pudding, a bit tricky, although you can get non dairy milk, which would help with cooking. However, a simple fruite salad, or jelly might placate your veggie.

Brucetta always goes down well but for the dairy-free person what about garlic bread minus the butter? Dip the bread in olive oil instead.
You seem to have covered the main meal so, what about a simple fruit salad for pudding?

Stir fry diagonally cut carrot and add dill after cooking. For a starter have lentil soup and for after a nice exotic fruit salad. You could also serve the dinner with a yoghurt and mint dressing.
