Cakewalk is optimized for multi-track recording and editing. Sony SoundForge is excellent for individually editing all aspects of a given channel or channels. Acid is good for building tracks from loops.

I use Ableton Live 5 (version 6 is out now), and have found it very good for creating tracks and doing remixes (provided I have a remix pack handy). It's also very good for live DJ'ing; BT is one artist who swears by it in his live shows, called "laptop symphonies", in which he remixes songs, adds elements from multiple tracks and uses his own elements and effects, all on the fly. Live is available for both Windows and Mac platforms.
