choose something that your fiancee love to do/ love to have/ love to go but never has the opportunity do !
It could be a special gift [ not necessary expensive ] but really able to make your fiancee extremely happy !
It could be a dream holiday/honeymoon of your fiancee choice that could serve as the long lasting memory, a place where you both could truly enjoy n have fun !
it could be something you both have never done that before but love to do so very much.
But most important is show your love without even saying it [may be whisper is nice too], just hold/hug her tightly after you have given your fiancee what ever special present !
