For cake pans, I prefer to use butter and flour, but for most other baking parchment paper is the best. I avoid bottled sprays because of the propane added to the oil to make it spray. There are pump bottles available to which you add your own oil, and pump it up to make a spray, and those work pretty well.

What are you makin'? I think it is better actually although not cheaper. I think there is a better chance of not sticking or burning with spray. Spray is very easy to use and get complete coverage. It is less messy. There are even olive oil versions for savory foods. There is also one that contains flour in the spray if you recipe asks for floured pans. (Pam Brand)

Spray oil is much better than solid. Its not as messy and much lower in fat. I usually use the spray kind and havent had a problem with it.
