I dont think there are only 3 blades in all ceiling fans. some have up to 5 blades and others a variable numbers.

but the reason for that is to aquire balance

Majority of ceiling fans have three blades, the blades push air downwards. More the number of blades the more air they will be able to push, but it will leave less free space through which the air can be pushed, also it will make the fan heavy, reducing its efficiency.
Balancing is another issue, single blade fan will be too difficult to balance. Two blade fans are out there.

There's not only 3. I have seen fans with as little as 2 blades, and as much as 8.

Less blades =cheaper fan.
