In other words, would the Jell-o still set into a nice mold shape even if the water I use is not boiling?

No, it wont set right. The water needs to be boiling in order to dissolve the jello completely. Luke warm simply wont do it. Boiling water isnt hard, you know. 1pan + water + stove + 10mins = boiling water

it may, but most likely no. the reason for the boiling water is that it has to be hot enough to dissolve the Jell-O mix so the mixture is even. without full dissolving the mixture is not the Jell-O recipe.

hmm I like that drink, but I never thought about its weight loss properties. I suppose the warm water helps and the vitamin c in the lime, as well the honey help to increase the metabolism. I always use boiling hot water, with a whole lemon and a large spoon of honey, I drink it because I love it, it's great for cold evenings. I believe, if you want to lose weight, it would be better to have it in the morning, so your metabolism gets its kick for the whole day. Maybe once again during midday or the afternoon. Good luck!
