I'm looking for a recipe for garlic pate that's fairly easy to make and ingriedents are readily available. Thanks.

Roasted Garlic Pate
2 whole heads garlic
1/2 lb.block mozzarella cheese
3 tablespoons olive oil

Wrap each whole garlic (paper and all) in double sheets of aluminum foil and roast at 300 degrees for 40-45 minutes. Allow to cool.
Squeeze out each individual clove of garlic and puree in food processor until creamy. Cut room temperature mozzarella into small squares and add to processor a couple at a time. Add oil as mixture becomes too thick to process.
When all ingredients are incorporated, puree mixture until smooth. Serve with crackers or thin sliced toasted French bread.

4 bulbs of garlic
200g/7oz feta cheese
3 celery stalks
A large bunch of fresh coriander leaves a small bunch of fresh rue leaves
2 tbsp olive oil
4 tbsp white wine vinegar
Sea salt

Break the garlic up into cloves and spread these out on a baking tray and grill for 5 minutes. Turn the cloves over a few times to ensure even cooking.

Leave to cool for a few minutes and then squeeze out the garlic flesh from the skins.

Roughly chop the celery, cheese and herbs and put them in a blender with the garlic and blend until smooth.

Add the wine vinegar and olive oil and blend.

Serve as an accompaniment.

Chinese Laundry Cafe's Feta and Garlic Pate

2 Garlic cloves; minced
4 Anchovy fillets; minced
6 tb Butter; softened
10 oz Cream cheese
6 oz Feta cheese
1/4 c Sour cream
1 tb Chives, fresh; chopped -OR- 1 tb -Green onions
Tabasco sauce; few drops
1 pn -Pepper; freshly ground

Combine all ingredients in food processor until very smooth and creamy. Spread on crackers, bread or bagels. Also terrific in sandwiches. MAKES: 2 CUPS
