I am trying to make some gluten free chicken wings and need help or more like directions. Thanks

Just season and put in a sprayed pan and "oven fry" them. Cook in oven at 350 to 400 degrees until chicken is crisp and juices run clear when poked with a fork.

There are a number of coatings you can shake the wings in to lightly coat them, or you can just saute them in a little olive oil.

Gluten free coatings:
~MASA - corn flour.
~Corn Meal
~Or Any of the specialty flours, like Garbanzo, Buckwheat, etc.
~Combine one or more for differnt flavors.

The flavoring combinations are many. Your personal tastes must be your guide. Here are some I like:
~Garlic powder (granules), Salt and Chili Powder.
~Cinnamon or pumpkin pie spice, salt and a pinch of cayenne pepper.
~Salt and pepper, with a sprinkle of lemon on the finished wings, just before eating.
~If you like the sweet taste, add a little sugar or artificial sweetner to any of the above.

The easiest way to put a light coating on your chicken is put the coating flour (about one cup to one pound of chicken) in a plastic bag, the one gallon size, add the flavorings of your choice, squeeze the top closed and shake lightly to mix them together.

Add the chicken to the bag, 2 or 3 pieces at a time. Hold the top tightly and shake the bag, not vigorously, just enough to coat the chicken. Use tongs to remove the chicken to a dry plate. When all are coated, fry them in hot oil (lower them cautiously so as not to splash any grease). Drain on several sheets of paper towel.

Coat chicken thighs with potato starch and pan-fry them in oil. When they're done, remove the chicken and adds potato starch to the pan drippings and mix it into a paste. Slowly stir in milk and stir constantly until the gravy thickens to desired preference. Add salt and pepper to taste.

Chicken Nuggets (Gluten-Free)

2 lbs. chicken breast
1 cup corn meal
1 teaspoon salt
½ teaspoon pepper
1 teaspoon garlic salt

Cut chicken breast into bite-sized pieces. Put other ingredients into a Ziploc bag, seal, and shake to mix. Drop a couple of pieces of the chicken into the corn meal mixture, seal the bag, and shake to coat. Remove to plate. Repeat until all of the chicken is coated. These can be fried in a deep fryer, in a skillet, or sprayed with PAM and baked at 350 degrees for 30 minutes.

GLUTEN FREE RECIPE: G.F. Oven Fried Chicken

1/2 cup butter or margarine
1 - 4oz. Pkg. Potato chips
1 - 2 1/2 or 3 lb. Ready cook broiler chicken cut up
1/4 tsp garlic salt
Pepper to taste

Set oven to 375 F
Melt butter
Crush potato chips with rolling pin before opening
Mix potato chips with garlic salt and pepper
Dip chicken in melted butter, then roll in potato chips
Place rest of butter, crumbs over chicken
Bake 1 hour. (do not turn)


GLUTEN FREE RECIPE: G.F. Oven-Crisped Pork Chops
(I think you could use Chicken)

4 cups G.F. corn flakes, crushed
1 egg
1 tbsp water
1 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
6 thick centre cut loin pork chops
Vegetable cooking spray

In a shallow dish or pan, place crushed cereal Set aside
In a small bowl, lightly beat egg, water, oregano, salt, pepper, and garlic powder
Dip chops into egg mixture
Coat with cereal
Place in single layer in shallow baking pan coated with cooking spray
Bake at 350* for about 1 hour or until tender. (Do not cover pan or turn chops while baking
