Sugar Free Spicy Apple Cakes
Ingredients
100g vegan margarine
100g sultanas
100g self-raising flour
2 heaped teaspoons cinnamon
3 heaped tablespoons cooked apple
Beat the margarine until it is soft. Chop or blend the sultanas and stir into the margarine. Add the cooked apple (which should be very runny and sauce like) and stir well. Add the cinnamon and the half the flour and stir well. Add the other half of the flour and mix thoroughly. Spoon into cake cases and cook in a pre-heated 200 degree oven for 20 minutes. Makes 10 small cakes.
The apple and sultanas sweeten the cakes so there is no need to add sugar which makes them great for diabetics and those wishing to reduce their sugar intake. Sugar can of course be added if you feel the need.
Great served warm with vegan cream.

EASY CUPCAKES
1 c. flour
1 1/4 tsp. baking powder
1/2 tsp. salt
1 c. sugar
4 tbsp. shortening
6 or 7 tbsp. milk
1/2 tsp. vanilla
2 egg yolks
Mix shortening and sugar; add flour, salt, and baking powder. Add egg yolk, milk and vanilla; mix well with mixer. Put batter into lined muffin pan. Fill cup 1/2 full. Bake at 375 degrees for 20 minutes. Frost if desired. Makes 9-18.

Herb Cheese Muffins
Ingredients:
1 cup unbleached white flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cornmeal
1 tablespoon brown sugar
1 egg
1 egg white
1 cup buttermilk
3 tablespoons minced scallions
1/2 teaspoon Dijon mustard
1 teaspoon dried dill
1/2 teaspoon dried thyme
1/4 teaspoon ground black pepper
1 tablespoon oil
1 cup grated low fat cheddar cheese
Directions:
Sift together the flour, baking powder, baking soda, and salt in a large mixing bowl.
Mix in the cornmeal and brown sugar.
In a separate bowl, beat the egg and egg white until foamy.
Add the buttermilk, scallions, mustard, dill, thyme, pepper, and oil to the beaten eggs and mix well.
Reserve 2 tablespoons of the grated cheese and stir the rest into the egg mixture.
Add the egg mixture to the dry ingredients, stirring just enough to make a moist batter.
Spoon the batter into 12 muffin tins, sprayed with nonstick spray.
Sprinkle the reserved cheese over the muffin tops.
Bake for about 20 minutes, or until an inserted knife comes out clean. Cool in the pan for 5 minutes then remove and cool on a wire rack.

3-step Cheesecake Recipe
Serves: 8 Servings
Ingredients:

2 8 oz pkgs cream cheese;

1/2 c Sugar
1/2 ts Vanilla
2 Eggs
1/2 Mini semi-sweet choco chips
Graham cracker crust
Instructions:
* You can substitute "light" cream cheese Beat cream cheese, sugar and
vanilla at medium speed until well blended. Blend in 2 eggs. Stir in
chocolate chips then pour batter into graham cracker pie crust. (you may
sprinkle 1/4 c mini semi-sweet chocolate chips on top if you desire) Bake
at 350F for 40 min, or until center is almost set. Cool. For best results
refrigerate for 3 hours.

WHITE CAKE/CUPCAKES
1 & 1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soymilk or other 'milk'
2 tsp vanilla
1/4 cup melted shortening or oil
1 egg sub (Ener-G), prepared and beaten
Preheat oven to 350 F.
Grease a cake pan.
In a large bowl, mix together flour, sugar, baking powder, and salt.
Combine remaining ingredients, and add to flour mixture. Beat for 2 minutes.
Put into cake pan or cupcake tins.
Bake ccupcakes for about 20 minutes, cake for 30 minutes,
or until a toothpick inserted in center of cake comes out dry.
Black Bottom Cupcakes Recipe
1 1/2 cups flour
1 cup sugar
1/4 cup cocoa
1/2 tsp. salt
1 tsp. baking soda
1 cup water
1 tsp. vanilla
1/3 cup cooking oil
1 tblsp. white vinegar
Mix together in a bowl flour, sugar, cocoa, salt and baking soda.
Add water, vanilla, cooking oil and vinegar. Beat until smooth.
Line muffin tins with paper baking cups. Fill each cup 1/3 full with batter.
Top each with a heaping teaspoonful of the cream cheese mixture below.
8 oz. cream cheese softened
1 egg
1/3 cup sugar
1/8 tsp. salt
6 oz. chocolate chips
Combine in a small mixing bowl the softened cream cheese, egg, sugar and salt. Beat well, then stir in chocolate chips. Bake at 350 for 25 to 30 minutes. Yields 2 dozen cupcakes.
Tips: These don't need to be iced. Also I save a little of the cake batter, and after putting the filling in, I add a teaspoon of cake batter on top to cover the cream cheese. It kind of gives it the effect of a Hostess Cupcake.
Cupcake Cookies (Recipe from 1963)
1/2 lb oleo
1/2 lb. cream cheese
2 cups flour
Mix well and place in refrigerator over night.
Filling: 2 eggs
1 cup walnuts
1 1/2 cup brown sugar
1 tsp vanilla
2 tblsp melted oleo
Press dough into small cupcake pans or cupcake liners. Spoon filling into each cup cake. Bake at 325 F. for 40 minutes.
Easy Cupcakes (Recipe from 1953)
2 eggs beaten
1/8 tsp salt
1 cup sugar
1 tsp vanilla
1 cup flour
1 1/2 tsp baking powder
1/2 cup boiling water
1 Tblsp butter
Beat eggs 5 minutes, adding salt, beat in sugar and vanilla, Sift flour and baking powder together, and add.
Melt butter in hot water and add. Use cupcake liners. Bake at 350 till done. 20 min.
Quick Sponge Cupcakes
1 cup flour
1 tsp baking powder
1 cup sugar
3 eggs
3 Tblsp cold water
flavoring if desired
Sift flour with baking powder, add the other ingredients and beat 5 minutes.
Put into muffin tins and bake in a moderate oven 350 for 20 min

Toll House Cupcakes
1/2 cup soft butter
6 Tablespoons brown sugar
1/2 teaspoon vanilla
Combine and beat till creamy.
Beat in 1 egg
Sift together and stir
1 cup plus 2 Tablespoons sifted flour,
1/2 tsp baking soda,
1/2 tsp salt
Spoon by rounded tablespoon into cupcake cups with papers.
Bake at 375 10 to 12 min. While they are cooking, make the topping.
Topping
1/2 cup packed brown sugar
1 egg
1/8 tsp salt.
Beat till very thick. Stir in 1 6oz pkg chocolate chips, 1/2 cup chopped walnuts and 1 tsp vanilla Spoon 1 tablespoon over each cupcake. Return to oven, bake at 375 for 15 min. Also see Tollhouse cookies.
Dinah's English Cupcakes (1968 church cookbook)
10 tablespoons flour
3 tsp. baking powder
pinch salt
1 cup shortening
10 tablespoons sugar
1/2 cup coconut
2 eggs
1 tsp. vanilla
milk
Sift dry ingredients, blend shortening and sugar. Stir in coconut. Beat eggs in 1 cup measuring cup, add vanilla. Fill remainder of cup with milk. Add to above mixture. Bake 20 minutes at 450 degrees.
