what is a good receipe for beef tenderloin done medium rare.

Assuming you are starting with a tenderloin that is 3-4 pounds, I would suggest the following:
Lightly sprinkle meat with seasoned salt and then generously coat the loin with finely chopped garlic and freshly ground black pepper. Allow the meat to come to room temperature before cooking. Place meat into a 450 degree oven for 20 minutes (to sear the meat and seal in its juices) then reduce heat to 300-325 degrees. Continue to roast until the core temperature is between 120 and 130 degrees. Remove the tenderloin and let it rest for at least 10-15 minutes. This will allow the meat to finish cooking and come to a proper temperature and the juices will not run out of the loin causing a dry piece of meat. I have done this many times and I guarantee you'll love it!! Best of luck and happy dining!

ROAST BEEF TENDERLOIN

Rub cut clove of garlic over a 4 to 6 lb. beef tenderloin. 4 to 6 lb. beef tenderloin. Remove surface fat and connective tissues. Rub cut clove of garlic over the tenderloin. Brush the meat with bacon fat and roast at 450 degrees for 45 to 50 minutes or internal temperature of 140. A hot oven gives a crusty outside and rare pink inside. If necessary, baste during roasting. 1/2 lb. mushrooms sauteed in butter is nice with the roast when served.

at work for catering we rub it with crushed black pepper and fresh chopped garlic then marinade it over night in V8 . Then place on the grill to get some char marking then bake it for a while until desired doneness.


invest into a instant read thermometer not a meat thermometer. I bought mine at the hardware store for $10.00 (digital)

I sprinkle mine with Tastefully Simple's Sun-Dried Tomato and Garlic pesto, then cook it in a crock pot for a few hours. It's yummy!
