Can't you just tell...they purr, knead bread, sleep with you, follow you around...Mine just seem content...

sleeping anywhere they please... Belly up, though some cats aren't comfortable in that position unless they're on a very soft surface (middle of a fluffy comforter will do the trick- or a down pillow)
Purring quietly is common.... but really loud, suddenly might mean more attention is required on your behalf (according to Kitty, though Kitty is actually quite happy and just wants a rub)
Playing around is also a good indicator. If a kitten attacks your foot or climbs a Christmas tree, they're playing and exploring. That is another good sign.
Cats are Subtle when they're happy, but not at all when they're not happy. it's pretty easy to tell when a cat is happy. Purring gives it away....

I've read that when a cat rolls over on its back and exposes his belly, he's completely comfortable. Its a vulnerable position, especially if he's sleeping.

Purring is the first sign.
Smiling with the eyes (almost closing them) is another.
Kneading is also a sign of contentment.

Ours lay on their backs, purr, smile with their eyes, and follow us everywhere we go wanting to be with us.
They know they are safe and secure here and they show it.

when they can lay down bearing their stomach at the ceiling and sleeping soundly in this position....it means they trust the surroundings they are in
