I'm having a wedding in a couple of months and already had a tasting with my caterer for my wedding menu. We customized our menu entrees by asking for two entrees we've seen in other places, but we did not provide them with recipes.

We picked out most of our hors d'oeuvres, salads, etc but the taste of the entrees was a little off. We asked about the ingredients and mentioned that the entrees were good but had a little bitterness that is not normal for the dishes. I think they added some unnecessary ingredients and omitted some ingredients that would have made it better.

Is it ok to email them some suggestions/recipes and ask them for another tasting for just the entrees?

Of course! Your the customer they are supposed to make the customer happy its their job! You are paying them so you better get your moneys worth. If your unsatisfied with them or any of your other vendors dont be afraid or hesitate to speak up about it. Its you and your fiances special day so you want it to be as enjoyable as possible.

You could. But it won't help you much. None of the food tastings really give you a good idea of what the food is going to taste like on your wedding day.

See, food will always come out differently when it's made personally for two people than when it's made in mass for over a hundred.

If they want the job, they'll "Cater" to your needs ha,ha, ha.
No, seriously, I think it's reasonable, especially since you didn't fully approve of the 1st tasting. It's called "working together". Either they work with you, or you find a caterer who can get it right the 1st time.

I would suggest you ask for the second but depending on how they are they may not be too happy. BUT remember you are paying them, this is your wedding and it you want it specially made be prepared to present the actual recipes.

Of course it is okay. It is your wedding and your money! Most caterers will provide more options upon request, all you have to do is ask!
