Do not ADD anything to them, they will get pastier and soggy, back on the stove over medium heat and fold and fold and fold to get the moisture out. Sounds to me you're having a starch attack and adding moisture won't help

I add 8 oz. softened cream cheese, 1 egg & garlic (to taste) to my mashed potatoes. Use mixer & blend well. Potatoes should be stiff, not runny or soft. Pat mixture into a 2.5 qt. baking dish coated with Pam. Top with butter and sprinkle with parmesan cheese.
I bake it at 350 - 400º (depends on what else I'm making) for 40 - 50 minutes. The top should be slightly browned & crispy. The potatoes will rise alittle in the baking dish.
These can be made ahead of time and kept in the fridge until ready to be baked.

Old fashioned potato pancakes. Take thee potatoes and add about 1 large egg to each half cup of potatoes. Heat oil or butter in a non-stick skillet. Spoon the potatoes egg mixture into the hot grease and fry up like pancakes, brown on both sides. If th pancakes are not staying together ad more egg.

Variations on this are to add additional ingredients to the egg and potatoes mixture before frying: finely chopped onions, finely chopped onions and green peppers, crisp bacon bits, grated sharp Cheddar cheese, left over cooked broccoli. Or any combination of these ingredients.

Really a very versatile dish. Great way to use up left over mashed potatoes too. A bit fattening but not too bad if you don't use too much grease in the skillet.

you can add a little butter or if you really want to salvage them add an egg and salt and pepper and onions crackers and mix all together and take flour and put in a dish and take the potato cakes and gently pat them in it and fry in oil or butter till golden.

See Steve G's suggestion: put them back into a pot on the heat of the stove and cook the excess moisture out, then season to taste, if needed! They'll be fine.

Add an egg or two, put them in cupcake pans and bake at 400 for 15 min or until golden brown

You can either put them back on the stove and stir to dry them out, or you can add some instant potato flakes. I prefer doing the first one.

throw in some chopped ham, add some milk and call it potato soup... i did this once when i ruined the potatoes for a dinner party and it was a hit!
