Homemade mayonnaise is more yellow than store bought mayonnaise. There are probably fewer yolks in store bought mayonnaise. However; the law does require it contain minimums on certain ingredients for it to be called mayonnaise otherwise it would be labelled whatever the other stuff is called...dressing?
Here is a classic mayonnaise recipe from ninemsn.com:
Makes about 1½ cups
3 egg yolks
2 teaspoons Dijon mustard
150ml olive oil
150ml sunflower oil
1-2 tablespoons lemon juice
Step 1 Assemble and measure all ingredients – as a general rule of thumb, the ratio is 100ml oil to 1 egg yolk. The simplicity of mayonnaise means that it is imperative to use the freshest possible ingredients. The oils should be combined in a bottle or a jug.
Step 2 Place a bowl on a damp tea towel (this helps to stabilise the bowl while whisking), add egg yolks and mustard, then stir to combine.
Step 3 Slowly add combined oils to egg yolk mixture, drop by drop at first, whisking to emulsify, then pour oils in a thin steady stream, whisking continuously, until mayonnaise is thick and well combined.
Step 4 Add lemon juice to taste and whisk until incorporated, then season to taste with sea salt and freshly ground black pepper. Mayonnaise will keep, refrigerated, closely covered with plastic wrap or in an airtight container for up to 1 week.
Tip: If the mayonnaise splits, it can be rescued: place another egg yolk in a clean bowl, whisk in 1-2 tablespoons boiling water, then whisk split mayonnaise in, a spoonful at a time, until incorporated and emulsified.

Good mayo is yellow/white as it contains nothing but egg & oil, and it's the emulsificaiton of the two that reduces the bright yellow colour of the yolks.
Commercial mayo has that much junk in it it has to be coloured white.

The color of real homemade mayo is far different from what you get in the store in big jars. It is much richer in color and not the uniform bland white of storebought mayos, and it has a much better taste too. Its easy to make.... get a recipe and give it a try.

it is made mostly of oil. the oil gets whipped into the egg yolks, so mayonaise appears that off-white color.

commercial made mayo is white cause of all the additives & preservaties they add to it. If you do it your self at home it will be yelowish in color.
