Rosemary Salmon Burgers. Sounds hard but quite easy and delicious!

INGREDIENTS
2 1/2 pounds king salmon fillet, skinned and de-boned
1 cup dry bread crumbs
1/2 cup minced red onion
1 tablespoon Dijon mustard
2 teaspoons prepared horseradish
2 eggs, lightly beaten
1 tablespoon minced fresh rosemary
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
DIRECTIONS
Prepare the salmon by cutting into strips, cutting the strips crosswise, and chopping the fish until well minced. Be sure to remove any remaining bones.
In a large bowl, mix the minced salmon with bread crumbs, red onion, Dijon mustard, horseradish, and eggs. Season with rosemary, salt, and pepper. Chill at least 30 minutes in the refrigerator.
Preheat an outdoor grill for medium-high heat.
Form the salmon mixture into 8 burger patties. Lightly coat each patty with olive oil.
Place salmon patties on the grill, and cook 4 or 5 minutes on each side.

Antipasto

1 cup marinated mushrooms
1 8 oz. jar of artichoke hearts
1 10 oz. jar of Spanish green olives
1 10 oz. jar of black olives
1/2 cup sweet green peppers
1/2 cup roasted red peppers
3/4 cup Vinegar
3/4 cup Olive oil
1/4 cup finely chopped onion
2 tbs. fresh basil; chopped
1 tsp Salt
1 tsp Sugar
1 tsp Cracked black pepper

Mix together the first six ingredients; set aside. Combine remaining ingredients in a saucepan; bring to a boil. Pour dressing over vegetables; place in a large bowl and cover. Let rest overnight to chill.

Serve on a large platter with slices of bread. Along with various cheeses and hams.

some dip. get a can of ro*tel, set aside, get some ground beef,cook with pepper, seasoning salt (onions) until done. drain grease. put in a crock pot the cooked ground beef, the can of ro*tel, and velvet-ta cheese cut up into chunks, turn crock pot on med/low and let it cook down until the cheese melts, get some dips chips and have a serious party. it is totally off the chain, have fun at your party. !!!!!!!!!!!!!!

Sweat and Sour meat balls..

1 package any style meat balls
1 bottle chilli sauce
1 bottle grape jelly

Make meat balls to specs on the package.

Heat chilli sauce and jelly in a pan.

once meat balls are done place in chilli/jelly mixture on stove on low heat for 20-25 mins. Stir every so often.

Serve.. enjoy...

A veggie or fruit tray, cheese and crackers, cookies, chips, pretzels, sodas. You probably don't want something that needs to be refrigerated or heated up since you're in school.

Go to Kentucky Chicken and buy a bucket, everybody will love you and you won't have to worry about heating, refridgeration or cleanup.
