Don't know what your budget is. or your access to parts, etc.]
But the muscle cars of the mid 1960's Mustangs, Cudas, any cars with high performance engines are in big demand and are selling at auctions for 80K and UP!!!!
If you are going to take a long time to restore it. Look for a mid 70's car that had limited models produced. look for any options that increased it's value. and use NOS parts to restore it. Also do the restoration so the car is like it was off the production line. In other words if it didn't come with a cd player, don't put one in!!!

If your talking about a classic muscle car, the best choice is a 1969 Camaro, big block. There is lots of places to buy parts and they are one of, if not- the most desirable old car with the best resale value out there.

All depends on your taste, I would stick with american cars, like chevy, ford or dodge. 68 Camaro, 69 Charger, 67 Mustang. If you intend to put alot of money in you want to able to recoupe that cost if you ever needed to sell it. Watch out for excessive rust and frame damage
